Bring a little sunshine into your life with a popular Mediterranean dish I've been eating in Greece. Shakshuka is made in many different countries with variations and frequently fresh tomatoes. Sadly in the UK tomatoes rarely taste that good!
But fortunately this spicy tomato base with eggs on top is such a quick and easy dish to make from store-cupboard ingredients. Add extra worcestershire sauce or tabasco if you like more of a kick!

Use a flat frying pan and saute onions gently for 5 minutes. Add garlic, chilli and tomato paste cook stirring for 1 minute. Stir in tomatoes and sugar and bring to boil. Add lid to pan and simmer for 10 minutes 'til mixture has thickened.
Make 4 dips in the mixture with the back of a spoon and drop in 4 eggs. Return lid to pan and continue to simmer for about 6 minutes 'til the egg whites have set.
I make it for myself and add just 2 eggs eating half the mix. Refrigerate the rest and, next day, warm through in the pan and add another 2 eggs.
